Gluten-free shortbread
Ingredients : 220g of gluten-free universal flour mixture, 1/2 teaspoon of fennel husks, 60g of cane sugar, 1 pinch of salt, 90g of butter, 1 egg, 1 egg yolk.
Preparation : Sift the flour into a bowl. Mix the chaff, sugar and salt. Add eggs and butter cut into pieces and quickly knead everything into a not too stiff dough. Let the dough rest in the refrigerator for 1 hour before continuing. Suitable as a base for cakes and shortbread cookies.
