Recipe for semolina dumplings:
Mix 1 egg with 70g of butter until a homogeneous mass and stir in 140g of durum wheat semolina. Add salt and nutmeg. Leave the dough to rest for about 10 minutes, then form dumplings with 2 teaspoons and let them sit in slightly boiling broth for about 15 - 20 minutes (depending on the size of the dumplings)
